Christiane Sauter-Pflomm

ÄLPLERMAKRONEN
​In Lindau in the three-country region of Germany, Switzerland and Austria, we always have the Swiss mountains in sight and enjoy the panorama. During an organ trip to Switzerland, we got to know the “Älplermakronen”. Our tour group was served this dish, everyone enjoyed it very much and were able to visit and listen to many beautiful organs on Lake Lucerne. We always enjoy cooking it at home. This dish is quick and easy to prepare and tastes great with real tangy Swiss cheese. Many people eat the apple sauce with the main course, but of course you can also enjoy it afterwards.
INGREDIENTS
  • 200g macaroni, penne rigate or similar pasta 
  • 4 medium-sized potatoes
  • 150g hard cheese, e.g. Appenzeller or Gruyere 
  • 200ml cream (sweet cream) 
  • 4 onions, cut into rings 
  • salt and pepper 
  • clarified butter 
METHOD
  • Slowly fry the onions in a frying pan in a little clarified butter until golden brown, turning occasionally. 
  • Peel and dice the potatoes and bring to the boil in salted water in a large pan.
  • After 3 - 5 minutes, add the macaroni and cook together until the pasta is “al dente”. Drain the cooking water.
  • Add the grated cheese and cream to the pasta and potatoes and stir so that the cheese melts.
  • Season with pepper and salt if necessary. 

    ​To serve, sprinkle the golden-brown onion rings over the Älplermakronen.
Traditionally, Älplermakronen are served with apple sauce or apple compote.

A little bit about Christianne . . . 
Christiane Sauter-Pflomm​ studied church music and organ master's degree in Esslingen and Heidelberg. For more than 20 years she was a full-time church musician in Mühlacker and choir director in Bietigheim-Bissingen. In 2020 she and her husband Burkhard, who now has a church music position in Lindau (Lake Constance), changed their place of residence and thus their area of ​​activity. Instead of many organ services and concerts, many children and older people enter her professional life. Every week she sings and makes music in 17 different groups with people from 2 to 99 years old, in kindergartens, schools, music schools and retirement homes. But her love of the organ remains, and she enjoys playing organ concerts in the local area and also organ concerts for children.

Christiane Sauter-Pflomm studierte Kirchenmusik und Orgel- Master in Esslingen und Heidelberg.
Mehr als 20 Jahre war sie hauptamtliche Kirchenmusikerin in Mühlacker und Chorleiterin in Bietigheim-Bissingen.
2020 wechselte sie zusammen mit ihrem Mann Burkhard, der nun in Lindau (Bodensee) eine Kirchenmusikstelle hat, den Wohnort und damit auch den Wirkungsbereich. Anstelle vieler Orgeldienste und Konzerte treten viele Kinder und ältere Menschen in ihr Berufsleben. Sie singt und musiziert jede Woche in 17 verschiedenen Gruppen mit Menschen von 2 – 99 Jahren, in Kindergarten, Schule, Musikschule und Altersheimen.
