Christoph Gensler


PANCAKES

Christoph writes: If I’m in a hurry, I like to make pancakes with jam or Nutella - the boys love them and I do too every now and then. I make them the same way, but usually leave out the butter. The important thing is they have to be completely fresh, straight from the pan. A mere 15 minutes after preparation, the pancake will only taste like rubber.
INGREDIENTS
  • 4 medium eggs
  • 250ml milk
  • 50g butter
  • 130g high-grade flour (in Germany it is rated as Type 405)
  • Pinch of salt
  • Extra butter for the pan
METHOD
  1. For the egg pancakes, separate the eggs. Put the egg yolks with milk in a bowl and stir. Melt the butter in a pan and add it to the egg yolks and milk. Add the flour and stir well.
  2. If possible, strain the egg mixture through a fine sieve. Beat the egg whites with a pinch of salt until creamy and carefully fold into the mixture using a spatula.
  3. Rub a coated pan with a little butter or oil. Pour a ladleful of dough into the pan, spread it evenly and thinly and fry the underside until golden yellow over medium heat.
  4. Flip pancake with a spatula and bake the other side until golden. Bake all the egg pancakes in this way and stack the finished pancakes on a plate. Bon appetit!

​For toppings you can use lemon, cinnamon and sugar, maple syrup, chocolate cream etc.

"The recipe project is a beautiful idea and I feel honored to be able to introduce myself to this illustrious circle.


​Jenny and I first met in 1998. We wanted to visit the Rieger organ in Christchurch, shortly after Martin released his CD "Let The Pealing Organ Blow!" Since then, we've stayed in touch, meeting several times and accompanying Martin at his organ concerts in Bamberg, Nuremberg, and Rothenburg.
Jenny and Martin are truly good friends. We've shared our joys and sorrows together for almost 30 years now—a very intense time for me, during which their former "Little German Family" grew up.

Playing the organ has always been a wonderful experience for me. Since I was 12, I've enjoyed discovering new melodies, harmonies, and rhythms and creating enchanting sounds from them. And when my church congregation shares their enthusiasm with me, I see it as both a gift and further motivation.
When I finally got the chance to play the Rieger organ in Christchurch in 2019, I felt a great personal blessing. A musical highlight for me was the live broadcast of the Christmas Eve Mass in 2021 with me at the organ.

Besides music, I also love nature, photography, skiing, and, of course, my cats. I enjoy hiking: in the mountains, on secluded beaches, and anywhere where I can find myself in fascinating landscapes. I enjoy being able to pass on some of my passions to my children.

I also work as an engineer. I create concepts for the operation and maintenance of new trains (primarily commuter trains), develop the control software, and test it on-site.

Christoph's original text in German: 

"Das Rezepte-Projekte ist eine schöne Idee und ich fühle mich geehrt, mich in diesem illustren Kreis vorstellen zu dürfen.
Im Jahr 1998 begegneten Jenny und ich zum ersten Mal in Kontakt. Wir wollten damals die Rieger-Orgel in Christchurch besichtigen, kurz nachdem Martin seine CD "Let The Pealing Organ Blow!" veröffentlicht hatte. Seitdem blieben wir in Kontakt, haben uns mehrmals getroffen und dabei Martin bei seinen Orgelkonzerten in Bamberg, Nürnberg oder Rothenburg begleitet.
Jenny und Martin sind echt gute Freunde. Wir teilen nun schon seit bald 30 Jahren Freude und Leid miteinander – für mich eine intensive Zeit, in der ihre frühere "Little German Family" groß geworden ist.

Orgelspielen ist für mich immer ein wunderbares Erlebnis. Seitdem ich 12 Jahre alt bin, habe ich Freude daran, neue Melodien, Harmonien und Rhythmen zu entdecken und daraus bezaubernde Klänge zu kreieren. Und wenn mich dann meine Kirchengemeinde ihre Begeisterung spüren lässt, sehe ich dies gleichzeitig als Geschenk und weitere Motivation an.
Als es 2019 endlich mit dem Spiel auf der Rieger-Orgel in Christchurch geklappt hat, habe ich dies als ein großes persönliches Glück wahrgenommen. Ein musikalisches Highlight war für mich die Live-Übertragung der Christmette im Jahr 2021 mit mir an der Orgel.

Neben der Musik liebe ich auch die Natur, das Fotografieren, das Skifahren und natürlich meine Katzen. Ich bin gerne wandernd unterwegs: in den Bergen, an einsamen Stränden und überall da, wo ich in faszinierenden Landschaften einen Zugang zu mir selbst finden kann. Dabei genieße ich es, meinen Kindern einen Teil meiner Leidenschaften mit auf deren Weg geben zu können.

Nebenher arbeite ich als Ingenieur. Ich erstelle Konzepte für die Bedienung und den Betrieb neuer Züge (im Wesentlichen S-Bahnen), entwickle dafür die Steuerungssoftware und erprobe sie vor Ort.
Es wird mir nie langweilig…"
