PASTA WITH CREAMY BACON, PEA AND MINT SAUCE

INGREDIENTS
  • Olive oil
  • Black pepper
  • 300g middle bacon, thinly sliced or chopped
  • Small bunch fresh mint leaves, chopped
  • 100g parmesan cheese, grated
  • 1 packet mini shell pasta (500g) 
  • 300g frozen peas
  • 1 tub Bulla Crème Fraiche (200ml)
  • 1 lemon, juiced 
METHOD
  1.  Bring a large pot of salted water to the boil, add the pasta, and cook according to the packet instructions. 
  2. Heat a large frying pan on medium-high and add olive oil. Add the bacon to the pan, sprinkle a little pepper over and fry until crisp. 
  3. Add the frozen peas and give the pan a good shake. Add the crème fraîche and chopped mint to the bacon and peas. Drain the pasta, but reserve some of the cooking water.
  4. Add the pasta to the frying pan. Add the lemon juice. When it’s heated through and mixed nicely, remove from the heat. Add some of the reserved cooking water if you need to thin out the sauce.
  5. Stir in the grated Parmesan and more cracked black pepper to taste. Serve.
