JAMES KIBBIE

ELEANOR KIBBIE'S WASSAIL BOWL
​Try serving my mother’s wassail recipe to your church choir before Christmas services. The combination of warm juices and tea benefits the voice.

INGREDIENTS
  • 2 cups (400 grams) sugar
  • 3 cups (700 ml) water
  • 1 tsp (2 grams) whole cloves
  • 1 tsp (3 grams) crystallized or ground ginger
  • 2 sticks cinnamon
  • 2 cups (475 ml) orange juice
  • 1/2 cup (120 ml) lemon juice
  • 1 quart (1 L) apple cider
  • 2 cups (475 ml) strong tea
METHOD
  1. Make a syrup of the sugar and water by cooking 10 to 15 minutes. 
  2. Tie spices in a cheesecloth bag and soak it overnight in the syrup. 
  3. Combine spiced syrup with the remaining ingredients and heat. Ladle into cups from a decorative serving bowl.

​James Kibbie is internationally renowned as an authority on the organ music of Johann Sebastian Bach. He has performed the complete cycle of Bach organ works in a series of eighteen recitals and is in constant demand as a Bach recitalist and clinician.  His recordings of the complete Bach works on historic baroque organs in Germany have been welcomed with enthusiastic critical and audience acclaim.
