CORNBREAD
INGREDIENTS
  • 115 gm unsalted butter, melted, plus more for brushing the pan 
  • 250 gm medium-coarse yellow cornmeal 
  • 114 gm all-purpose flour 
  • 55 gm granulated sugar 
  • 3½ tsp baking powder 
  • 1 tsp kosher salt 
  • ¼ tsp baking soda 
  • 470 ml buttermilk, preferably full-fat 
  • 2 large eggs, lightly beaten 


METHOD
  1. Heat oven to 400 ℉ (around 180℃ fan oven) . Butter the bottom and sides of a 10-inch skillet or cast-iron pan and set aside. 
  2. In a medium bowl, whisk the cornmeal, flour, sugar, baking powder, salt and baking soda. Make a well in the center and pour in the buttermilk and eggs. Use a wooden spoon or spatula to stir until incorporated. Fold in the melted butter. Pour the batter into the prepared skillet and smooth the top. 
  3. Bake until the top is lightly browned and the sides pull away cleanly from the skillet, about 25 to 30 minutes. Cool completely and serve warm or room temperature, or reserve to make cornbread dressing. ​

With a personal focus on the healing quality of Beauty, Jonathan Dimmock is recognized internationally as a consummate artist, and his musicianship is enjoyed by at least 100,000 people each year.

An innovative programmer, he designs and performs weekly programs for the Legion of Honor Museum, where he serves as Principal Organist, illustrating the correlation between art and music. He is also the Organist for the San Francisco Symphony, Music Director at Congregation Sherith Israel, and in constant demand as an organ accompanist. He is one of the few organists in the world to perform on six continents – venues from St. Peter’s in Rome to Notre Dame in Paris, and from Carnegie Hall to the Cultural Center in Hong Kong.

A graduate of Oberlin and Yale, Jonathan had the unique privilege of being the first American to serve as Organ Scholar of Westminster Abbey, after which he has continued his career in the U.S. serving three cathedrals: St John the Divine (New York City), St Mark’s (Minneapolis), and Grace (San Francisco). For over twelve years, he was also Music Director at St Ignatius Church in San Francisco – the largest Jesuit church in the United States. He has recorded more than fifty CDs including a Grammy Award-winning Mahler Symphony VIII with the San Francisco Symphony.

Jonathan has been interviewed and featured on numerous radio and television stations including National Public Radio, Radio France, BBC3, ABC (Australia), MTV2 (Budapest), BCC (Barbados), and SABC (South Africa).

He has founded five non-profit organizations, including the highly acclaimed American Bach Soloists and The Resonance Project – using live music to transform conflict and find common ground, hailed by President Obama for its visionary approach to building world peace.
