ZUCCHINI SOUP

"Once when I had Michel Bouvard for dinner at my place, I prepared this soup for him as a starter in a glass. He liked it so much that he said: "it's perfect, I'll come back next week with Yasuko, she has to try it".
It's a very easy and very good recipe that I recommend to people in a hurry!
I really like cooking because my mother runs a restaurant, I grew up in the atmosphere of good cooking."
As I often have very little time I have to cook very quickly.
A dish that I really like to cook:
ZUCCHINI SOUP

  • Peel 3 zucchini and cut them into 4, then into small cubes
  • Peel a large potato then cut it into small cubes
  • Cut a large onion into small pieces
  • Put everything in a pot and cover with water (a little more than the volume of the vegetables) 
  • Salt, pepper, add a maggi cube- boullion or oxo cube - (if necessary)
  • When the vegetables are cooked, add pieces of feta
  • At the last moment, add coconut milk
  • Remove from the heat and set aside to serve, adding a basil leaf and a few dashes of olive oil

"Une fois alors que j’avais Michel Bouvard a dîner chez moi, je lui préparais cette soupe en entrée dans une verrine. Il a tellement aimé qu’il m’a lâché : « c’est parfait je reviens la semaine prochaine avec Yasuko, il faut qu’elle goûte »
​C’est une recette très facile et très bonne que je conseille aux gens pressés ! J’aime beaucoup cuisiné du fait que ma mère tient un restaurant j’ai grandi dans l’atmosphère de la bonne cuisine !"
Comme j’ai souvent très peu de temps je suis obligé de cuisiner très rapidement.
Un plat que j’aime beaucoup cuisiner: la soupe à la courgette
  • Eplucher 3 courgettes et les couper en 4 puis en petits dés.
  • Eplucher une grosse pomme de terre puis la couper en petits dés.
  • Couper un Gros oignon et le couper en petits morceaux.
  • Mettre le tout dans une marmite et recouvrir d’eau (un peu plus que le volume des légumes.)
  • Saler, poivrer, ajouter un cube magi (si besoin)
  • Lorsque les légumes sont cuits, ajouter des morceaux de Feta au dernier moment, ajouter du lait de coco.
  • Retirer du feu et mixer l’ensemble
  • A servir en y ajoutant une feuille de basilic et quelques pointes d’huile d’olive.

Titulaire of the grand organ at Saint-Eustache Church in Paris and Professor of Organ Interpretation and Harmony at the Paris National Conservatory of Music (CNSMDP), Thomas Ospital was awarded First Prize at the 2009 International Competition of Organ in Saragossa, Spain, the Duruflé-Prize and the Audience Prize at the 2012 International Chartres Competition, and Second Prize at the 2013 International Xavier Darasse Competition in Toulouse. In May of 2014 he took the Grand Prize Jean Louis Florentz and the Audience Prize at the International Organ Competition of Angers under the direction of the Académie des Beaux-Arts, and in November of 2014 he was awarded Second Prize, Audience Prize and the Florentz Prize at the International Chartres Competition.
Thomas is eager to perpetuate the art of improvisation in all of its forms, including the accompaniment of silent films. His performances have taken him throughout Europe, including the United Kingdom, Spain, Italy, Greece, Germany, Switzerland and Holland. He has also performed in Russia, Australia and in North America, where in 2012 he served for six months as Young Artist in Residence at the Cathedral-Basilica of Saint Louis King of France in New Orleans, USA.
Born in 1990, Thomas Ospital began his musical studies at the Conservatory Maurice Ravel in Bayonne, France, completing his studies with Esteban Landart in 2008. From 2008 until 2015 he was a student at the National Conservatory of Music in Paris where he earned five First Place prizes in organ, improvisation, harmony, counterpoint and fugue. His teachers at the Paris Conservatory included Olivier Latry, Michel Bouvard, Thierry Escaich, Philippe Lefebvre, László Fassang, Isabelle Duha, Pierre Pince and Jean-François Zygel.
Thomas currently serves as Titular Organist of the largest pipe organ in France; the Grand Organ at St Eustache in Paris. He took up the post in 2015 when he succeeded Jean Guillou. From 2016 to 2019 he served as the first Organist in Residence at Radio France. He is also Professor of Organ Interpretation alongside Olivier Latry (appointed 2021) and Professor of Harmony (appointed 2017) at The Paris National Conservatory of Music (CNSMDP).
