My wife Kim absolutely loves cooking, having grown up in Vietnam and having developed an excellent talent for blending flavours and spices. After we met, we pushed each other to cook from as many different cultures as we could, from European to Asian to classic Australian BBQs.
However, the day came where I wanted to present something special for Kim – it was one winter’s evening during one of those Covid lockdowns, and I was having a bit of a hard time finding a cuisine we hadn’t tried before. Eventually I realised I had to look not just to different countries, but different eras too, just as I do when looking for organ repertoire. I took my love of history and found this great recipe of Apicius from Ancient Rome; I was intrigued by it because we always hear exultant phrases about “milk and honey”, but rarely do we actually combine these two ingredients into a recipe. Well, the dish went down perfectly, and on that same night I proposed to her, and thankfully she accepted! INGREDIENTS
1.25kg shoulder/leg lamb
For the marinade 570ml milk 120g clear honey 1 tbsp pepper; salt 1/2 tsp asafoetida powder or 5 drops asafoetida tincture (you can use garlic or onion powder as a substitute) For the sauce 8 fresh or dried dates 280ml red wine 4 tbsp olive oil 2 tbsp clear honey 4 tbsp fish sauce A little cornflour (corn starch) METHOD

Having previously served as Organ Scholar at St James’ King St, and Assistant Organist at St Mary’s Cathedral Sydney, Titus completed a Bachelor of Music in Organ Studies at the Sydney Conservatorium of Music in 2019. Titus is also a violinist and pianist, a teacher, and an active composer.
