TITUS GRENYER

ROMAN LAMB
Attributed to Marcus Gavius Apicius
Titus writes:
My wife Kim absolutely loves cooking, having grown up in Vietnam and having developed an excellent talent for blending flavours and spices. After we met, we pushed each other to cook from as many different cultures as we could, from European to Asian to classic Australian BBQs.
However, the day came where I wanted to present something special for Kim – it was one winter’s evening during one of those Covid lockdowns, and I was having a bit of a hard time finding a cuisine we hadn’t tried before. Eventually I realised I had to look not just to different countries, but different eras too, just as I do when looking for organ repertoire. I took my love of history and found this great recipe of Apicius from Ancient Rome; I was intrigued by it because we always hear exultant phrases about “milk and honey”, but rarely do we actually combine these two ingredients into a recipe.
Well, the dish went down perfectly, and on that same night I proposed to her, and thankfully she accepted!

INGREDIENTS
1.25kg shoulder/leg lamb

For the marinade
570ml milk
120g clear honey
1 tbsp pepper; salt
1/2 tsp asafoetida powder or 5 drops asafoetida tincture (you can use garlic or onion powder as a substitute)

For the sauce
8 fresh or dried dates
280ml red wine
4 tbsp olive oil
2 tbsp clear honey
4 tbsp fish sauce
A little cornflour (corn starch)
METHOD
  1. Marinate the lamb overnight for 12-24 hours in the marinade; flip the lamb midway for full absorption.
Also overnight, soak 8 fresh/dried dates in a small bowl of red wine.
  2. Set the oven to 200°C. Remove and dry the meat from the marinade, season with salt/pepper and olive oil.
Roast the lamb in the oven for 20 minutes, plus 20 minutes for every 1lb (450g) of weight.
  3. When the meat is nearly ready, crush the soaked dates to a pulp, and put it into a saucepan with the remaining red wine, honey, fish sauce and oil. Bring to the boil for a few minutes, then thicken with cornflour (you can mix it with a little water beforehand to avoid lumps).
  4. Remove the lamb from the oven and leave to rest for 10 minutes, before carving thick slices and serving it with the sauce.

Titus Grenyer is the Organist for the Sydney Town Hall, which has the beautiful 1890 Hill & Son organ, the largest organ in the world when completed and one of only two in the world with a 64' stop. Having previously served as Organ Scholar at St James’ King St, and Assistant Organist at St Mary’s Cathedral Sydney, Titus completed a Bachelor of Music in Organ Studies at the Sydney Conservatorium of Music in 2019. Titus is also a violinist and pianist, a teacher, and an active composer.

You can find more about Titus’ music and work through his Youtube channel 'Pep Organ'. Created in 2020 with his wife Kim, Pep Organ is now the largest organ channel in Australia, with more than 3,000 subscribers and 250,000 video views.
The channel features a carefully curated selection of organ music and thoughtful discussion, aided by high-quality video production.

"This channel was created because there are not enough high-quality recordings of good organ music. We feel that the public deserves to hear music which is accessible and engaging, rather than academic, overly complicated music that is incomprehensible. Our channel offers the alternative: music that only requires a heart to appreciate."
